Cheese stuffed tomatoes

 

  

 

Ingredients

8 fresh medium or cherry tomatoes

200gr hard cheese

100gr mozzarella cheese

2 garlic cloves, chopped

1/3 cup olive oil

Breadcrumbs

Salt and black pepper

 

Method

1.       Slice the tomato tops off and remove the pulp with a spoon

2.       Process pulp in food processor

3.       Add the cheese and garlic, add breadcrumbs to thicken and season to taste

4.       Fill each tomato with the mixture, sprinkle with some cheese and drizzle with olive oil

5.       Bake in a medium oven for 20 minutes
