Aubergines in Garlic

Melanzane con Aglio

Ingredients

2 long aubergines

4 crushed garlic cloves

1 cup olive oil

Balsamic vinegar

Salt and black pepper

 

Method

1.       Slice the aubergines lengthwise

2.       Fry the aubergines slices in a pan without oil

3.       In a separate pan, fry the garlic in olive oil

4.       When the garlic browns, add the aubergine

5.       Fry the aubergine and garlic till brown

6.       Set aside and season to taste
