Mozzarella
and aubergine slices.

Ingredients
2
long aubergines, medium size sliced
200g mozzarella cheese
Olive oil
Lemon peel
¼
cup parmesan cheese
Method
1.
Sprinkle aubergine slices with salt, set aside for 1 hour
2.
Cut the mozzarella into slices to the same number as the aubergine
slices.
3.
Wipe off the salt from the aubergines
4.
Drizzle each aubergine slice with olive oil
5.
Place a mozzarella slice and grated lemon peel on each aubergine
slice
6.
Sprinkle with grated parmesan and bake in a very hot oven for ¼ of
an hour
7.
Set aside and serve cold.
