Aubergines and peppers in breadcrumbs

Ingredients

1 aubergine, sliced into rings

2 red peppers, sliced into strips

½ cup breadcrumbs

½ cup olive oil

Balsamic vinegar or wine vinegar

 

Method

Note: set fried vegetable aside for a while after frying so that herbs flavours can be absorbed.

1.       Sprinkle aubergine slices with salt and set aside for 1 hour

2.       Wipe off the salt and absorb the moisture from the sliced aubergines

3.       Dip the peppers and aubergines in olive oil

4.       Dip aubergines and peppers in breadcrumbs

5.       Heat the oil in a pan and fry the aubergines and peppers until golden brown, fry the peppers first, than the aubergines.

6.       Set aside and drizzle with vinegar, let cool.
