Cabled aubergines

 

 

Ingredients

A few baby aubergines

Olive oil

Yellow cheese sliced to match the number of aubergines

2 tomatoes sliced into rings

Sliced bacon or pastrami to match the number of aubergines

Basil leaves for decoration

Salt

 

Method

1.       Slice each aubergine lengthways but do not separate the two halves

2.       Open the two halves and drizzle with olive oil and salt

3.       Place a slice of tomato, cheese, and pastrami or bacon inside each aubergine

4.       Tie each aubergine with a string and place in an ovenproof dish in a hot oven (200 degrees) for 20 minutes or till aubergines are soft
