Meat stuffed peppers

 

Ingredients

2 red peppers, sliced lengthways into 4 parts

2 green or red peppers, sliced lengthways into 4 parts

250gr minced meat (not lean meat).

100gr yellow cheese or shredded mozzarella cheese

2 crushed garlic cloves

3tsp dried oregano

1/3 carton of cream

¼ cup white wine

¼ cup breadcrumbs

Salt and freshly milled black pepper

Oil for frying

 

Method

1.       Remove the tops of the peppers and discard the seeds

2.       Place peppers in a hot oven (200deg.) and bake till browned, turn over to ensure all sides are cooked

3.       Remove from oven and place in a nylon bag for 10 minutes, remove and peel peppers.

4.       Fry the meat and garlic in a pan with a little oil, season to taste and add the oregano

5.       When the meat changes colour, add the cream and the wine and cook until all liquids are reduced.

6.       Lay the pepper strips flat And place some shredded cheese in the centre of each slice

7.       Add the meat and roll, fasten with a cocktail stick

8.       Place the peppers in the oven and bake for 5 minutes on high heat.
