Rice stuffed tomatoes

 

 

 

Ingredients

4 fresh, medium tomatoes

½ cup rice

2 mozzarella balls

The juice of ½ a lemon

2 chopped garlic cloves

1/3 cup olive oil

Salt and black pepper

 

 

Method

1.       Heat a little olive oil in a pan and fry the garlic

2.       When the garlic changes colour, add the rice and gently fry

3.       Add a cup of water, season with salt and pepper and bring to the boil

4.       Simmer ,covered until the water has all gone

5.       Slice off the tomato tops, remove the insides with a spoon

6.       Place tomatoes ion a baking dish, fill each tomato with rice and drizzle with olive oil

7.       Cover with a mozzarella slice and replace the tomato tops

8.       Bake in a medium oven for 30 minutes
