Shrimps’ Pancakes

 

Ingredients

1/2kg peeled shrimps

50gr (2oz) pine nuts

¼ cup dry red wine

¼ cup olive oil

2 finely chopped garlic cloves

2 Tbs breadcrumbs.

1 beaten egg

Salt and black pepper

 

Method

1.       Cook the shrimps in boiling water for 3 minutes

2.       Remove the water well

3.       Place the shrimps in a food processor; add the pine nuts, garlic and the breadcrumbs, blend well.

4.       Remove form the processor and add the egg, salt and pepper, mix well.

5.       If the mixture is too wet, add breadcrumbs

6.       Wet you hands and form flat pancakes, fry in olive oil or butter

7.       Serve with a hot sauce.
