Baked tomatoes

Ingredients

1 kg tomatoes

1 cup olive oil

1 garlic clove, crushed

1 cup breadcrumbs

1 cup chopped parsley

Salt and pepper

 

Method

1.       Cut the tomatoes in half and discard the seeds

2.       Lightly salt the tomatoes and set aside to remove liquids for 30 minutes

3.       Mix the parsley, breadcrumbs, garlic and the olive oil, season to taste

4.       Place the tomatoes in a small baking tray and spread the breadcrumbs mixture over them, bake at 150 deg. For 30 minutes.
