Sweet potato and basil

 

Ingredients

3-4 medium sweet potatoes

4 Tbs olive oil

1 garlic clove crushed

2 Tbs tomato puree

20 basil leaves-chopped

Salt

3 Tbs balsamic vinegar

 

Method

1.      Peel the potatoes and cut into thin rings

2.      Fry in olive oil till soft take care not to create chips

3.      Add garlic and tomato puree

4.      Remove from heat let cool and add balsamic vinegar

5.      Sprinkle with chopped basil and serve
