Aubergine Carpaccio

 

Ingredients

1 medium aubergine, cut into thin rings (not more than 1.5mm)

Good quality olive oil

White wine vinegar

Parsley

Grated Parmigianino cheese

 

Method

1.       Slice the aubergine thinly

2.       Place aubergine in an oven dish and drizzle with olive oil

3.       Oven bake on high heat until aubergines start to brown

4.       Remove from oven, place in a serving dish and drizzle with wine vinegar

5.       Sprinkle with grated parmesan cheese

6.       Add parsley leaves and serve at room temperature
