Aubergines with sun dried tomatoes

 

Ingredients

2 aubergines, cubed

3 sun dried tomatoes

1 cup oil for frying

4 Tbs red wine vinegar

Salt

1/3 cup chopped basil leaves

 

Method

1.       Heat oil in a frying pan, fry the aubergine  until partially browned

2.       Set aubergine aside in a sieve for half an hour at least, to get rid of surplus oil

3.       Transfer the aubergines into a bowl

4.       Chop the dried tomatoes and add to the bowl

5.       Season with wine vinegar and salt

6.       Let cool to room temperature, sprinkle with basil and serve.
