Aubergines in beef stuffing

 

 

Ingredients

2 long aubergines halved lengthways

150gr minced beef

100gr grated yellow cheese

2 crushed garlic cloves

1 Tbs crushed tomatoes

Breadcrumbs

Olive oil

 

Method

1.       Scoop out the inside of each aubergine half with a spoon

2.       Chop up the scooped  aubergine  with a knife and set aside

3.       Heat 2 Tbs of olive oil in a pan, add the garlic and when golden, add the minced beef

4.       When meat has browned in the pan, add the scooped aubergine

5.       Sprinkle with salt and pepper and add the crushed tomatoes cook on a medium heat for 10 minutes

6.       Take the pan off the heat, add the grated cheese, mix well and stuff the aubergine shells with the meat mixture

7.       Drizzle each aubergine with olive oil and spread with breadcrumbs

8.       Bake at 180 degrees for 15 minutes

9.       5 minutes before finishing, sprinkle with grated yellow cheese
