Aubergine rolls with cheese and pesto filling in tomato sauce

An  impressive dish that can be served as a festive first course

 

 

Ingredients

medium aubergines, sliced into thin longitudinal slices 2

Olive oil

Readymade pesto sauce

150gr soft goats cheese

4 fresh tomatoes sliced into cubes

50gr parmesan cheese

100gr shredded mozzarella cheese


Method

1.      In a ridged frying pan, fry the aubergine slices

2.      Let cool and spread some pesto on each slice and top with a slice of goats cheese

3.      Roll each slice into a cylinder and place in a baking dish, 2-3 rolls adjacent to each other

4.      Season with salt and pepper

5.      Sprinkle with the cubed tomatoes

6.      Add a mix of the cheeses-mozzarella and parmesan

7.      Bake in the oven for 20 minutes till the cheese crust is bubbling and golden
