Aubergine cubes in tomatoes

 

Ingredients

1 medium aubergine

2 Tbs tomato puree

1/3 cup olive oil

Salt

 Chilli pepper

3 sliced garlic cloves

Parsley

 

Method

1.       Peel the aubergine and cut into large cubes

2.       In a large frying pan heat the oil and gently fry the garlic make sure it does not burn

3.       When the garlic changes colour, add the aubergines and fry on low heat for 10 minutes keep stirring to ensure that the aubergines do not burn.

4.       Add the tomato puree and2 Tbs of water

5.       Season with salt and pepper and cook for 5 minutes

6.       Remove from heat and sprinkle with parsley.

Serve hot or cold
