Aubergines with goat’s cheese, cucumbers and tomatoes

  1. Ingredients

    2 medium aubergines, sliced lengthways

    Olive oil

    150g soft goat’s cheese

    4 fresh tomatoes cut into small cubes

    2 brine pickled cucumbers

     

    Method

    1.       Cook the aubergine slices in boiling water until they change colour

    2.       Set aside, remove surplus water and drizzle with olive oil

    3.       Cut the cucumbers finely , add 1 Tbs of tomato and cucumber to each slice

    4.       Add 1 Tbs of goat’s cheese and roll the aubergine slices

    5.       Fasten with a cocktail stick and serve at room temperature
