Aubergines with olives and tomatoes

 

 

Ingredients

1 aubergine cut into fingers

100g black or green olives, pitted and sliced in half

1/3 tin of crushed tomatoes

½ cup onion

Oil fro frying

Salt and pepper

 

Method

1.       Fry the onion till it starts to brown

2.       Add the aubergines and fry till soft

3.       Add the tomatoes and bring to the boil

4.       Add the olives, salt and pepper and continue cooking for 4 minutes

5.       Serve hot or at room temperature.
