Swiss chard rolls

Ingredients

4 Swiss chard leaves

2 potatoes cut into small cubes

Balsamic vinegar

Or-wine vinegar

100gr goose fat, cut into small cubes

Oil for frying

Salt and black pepper

 

Method

1.       Fry the potatoes in deep oil until browned

2.       Set aside and heat up the goose fat for 1 minute

3.       Mix the goose fat with the fried potatoes

4.       Add 4 tsp of vinegar and season with salt and pepper to taste

5.       Wilt the Swiss chard leaves in boiling water for a few seconds

6.       Make each leave into a cone and fill with the potatoes mixture

7.       Place in a hot oven for 10 minutes and serve hot
