Swiss chard Frittatas
This time we will only use the white part of the Chard leaves
Ingredients
10
chard leaves
3
eggs
3
Tbs flour
2
chopped garlic cloves
1
onion sliced into rings
3
Tbs oil for frying
50g
(20z.) butter
Salt and freshly milled black pepper.
Method
1.
Remove the green parts of the chard leaves and cut the white parts
into long strips
2.
Fry the onions till softened
3.
Place the olive oil and butter in a large pan and heat up
4.
Beat the eggs with the flour and garlic and season with salt and
pepper
5.
Add the onion and the chard to the eggs and mix well, pour into the
pan
6.
Reduce the heat and cover the pan, fry for 15 minutes on low heat
until the frittata hardens
7.
Turn over the frittata and fry for an extra 5 minutes
Can
arrange the chard and the onion in the pan in a decorative pattern after
placing half the egg mixture in the pan. Pour over the rest of the eggs
and fry.
Mainly Served cold
