Prosciutto, mascarpone and courgette rolls
Ingredients
2 courgettes (Zucchini)
10-12 slices of Prosciutto or Spec
½ a carton of Mascarpone
50 gr yellow cheese
3 crushed garlic cloves
Salt
Method
1.
Place the mascarpone, cheese and garlic in a food processor
and blend to a smooth paste
2.
Slice the courgettes into 5-6 thin slices
3.
Fry the courgettes slices lightly on each side
4.
Place a slice of prosciutto on a serving dish, top with a
courgette slice and a tbs of the cheese mixture
5.
Roll the prosciutto and courgette and secure with a cocktail
stick
6.
Decorate with a cheese flower formed with a cake decorating
bag.
7.
Serve with vinaigrette sauce, containing balsamic vinegar.
