Aubergines in Parmesan

Ingredients

2 medium aubergines sliced into rings

1 tin of tomatoes or chopped tomatoes

100g hard cheese or Bulgarian cheese-grated

4 crushed garlic slices

2-3 basil stalks-fresh

¾ cup olive oil

Salt 100gr parmesan cheese

 

Method

1.       Pan fry the garlic in oil till browned

2.       Add the tomatoes and ½ cup of water and season with salt

3.       Cook on a medium heat for 15 minutes

4.       In a separate pan, fry the aubergine slices in the rest of the oil till browned slightly

5.       Set aubergine aside on a paper towel to absorb excess oil

6.       In a medium Pyrex dish, place a layer of aubergines, top up with the cooked tomatoes and sprinkle with the grated cheese and basil leaves

7.       Add another layer of aubergines and top up with the tomatoes, cheese and basil, repeat until all the aubergines had been used, make sure the aubergines are covered in the sauce.

8.       Bake in a medium oven for 15 minutes

9.       Set aside, sprinkle with grated parmesan and serve immediately.
