Marinated Octopus tentacles

 

Ingredients

½ kg octopus tentacles

1 cup dry white wine

1 spring onion, chopped (the white part only)

3 chopped garlic cloves

1 red onion, chopped

Fresh basil leaves, chopped

Fresh curly parsley, chopped

Fresh dill, chopped

1/2Tsp chilli pepper flakes

1/3 cup olive oil

The juice of half a lemon

3-4 Tsp balsamic vinegar

Salt

 

Method

1.       Boil the octopus tentacles in water for three minutes

2.       Place the wine, onion and garlic in a pan and bring to the boil

3.       Add the cooked octopus and cook for 5 minutes

4.       Set aside the octopus and place in a bowl

5.       Add the spring onion, basil, parsley and dill and mix well

6.       Mix the olive oil and lemon juice together and pour over the octopus

7.       Cover and chill for one hour
