Herb stuffed sardines

 

Ingredients

500gr fresh sardines

Juice of 2 lemons

4 crushed garlic cloves

10 basil leaves finely chopped

10 sprigs of parsley, finely chopped

10 dill sprigs, finely chopped

Salt and black pepper

3-4Tbs breadcrumbs

2 Tbs olive oil

Flour

Oil fro frying

 

Method

1.       Clean the fish, removing the heads and guts, leave the fish whole

2.       Pour lemon juice over the fish and set aside for a few minutes

3.       Crush the herb leaves with the olive oil, add the salt, pepper and breadcrumbs

4.       Stuff each fish with the herb blend and close to return to its natural condition

5.       Dip the fish in flour and fry in a little oil

6.       Set fish aside and add the juice of half a lemon and a little flour to the pan

Serve with a slice of lemon and a precooked rice ball; pour over the sauce left in the pan.
