Tomatoes stuffed with shrimps

 

Ingredients

8 medium round tomatoes

½ kg medium shrimps

½ cup breadcrumbs

Handful of basil leaves, finely chopped

¼ cup olive oil

6 crushed garlic cloves

Salt and black pepper to taste.

 

Method

1.       Peel the shrimps and fry in oil for 4 minutes with the garlic, set aside.

2.       Remove the tops of the tomatoes and set aside

3.       Remove the tomato seeds and flesh and place in a bowl

4.       Place the tomato flesh in a food processor, add the breadcrumbs, pepper, salt and olive oil and process into a mixture.

5.       Add the basil leaves and blend for 15 seconds

6.       Fill each of the hollowed out tomatoes with the mixture and add the fried shrimps

7.       Cover with the tomato tops and place in a medium oven

8.       Bake for 10 minutes, set aside and serve hot.
