Tomatoes and purple onion

Pommodori con Cipolla Rossa

Ingredients

4 medium tomatoes sliced

4 sun dried tomatoes sliced

1 purple or red onion chopped fine

Fresh or dry oregano, chopped fine

4-5 tbs olive oil

Salt

¼ cup red wine vinegar

 

Method

1.       Place sliced tomatoes in a baking dish

2.       In a separate dish, mix the onion, dried tomatoes, oregano, salt and olive oil

3.       Spread a generous portion of this mixture on the tomatoes

4.       Place in a hot oven for 10 minutes

5.       Drizzle with wine vinegar and let cool.

6.       Serve after one hour, without reheating.
