Beef stuffed tomatoes

 

Ingredients

6 tomatoes

250gr slightly fatty mined beef

1 chopped onion

3 crushed garlic cloves

Salt and black pepper

50gr pine nuts

150 gr yellow cheese, grated

3 tbs olive oil

 

 

Method

1.       Slice off the tomato tops and place aside

2.       Remove the tomato pulp and shred in a food processor

3.       Fry the onion in olive oil and when golden add the garlic

4.       Add the mince beef, season to taste and cook until it changes colour

5.       Add the pine nuts, mix well and remove from heat

6.       Fill the tomatoes in the mixture, sprinkle with the grated cheese

7.       Cover in the tomato tops, place in a hot oven for 20 minutes.
