Tomatoes
in olive oil and breadcrumbs
Ingredients
6
medium tomatoes
½
cup breadcrumbs
1/3
cup olive oil
Salt and black pepper
Method
1.
Slice each tomato in half
2.
Spread the cut with breadcrumbs
3.
Place in a baking dish and season with salt and pepper
4.
Drizzle with a generous dollop of olive oil
5.
Oven bake on medium heat for 20 minutes, till tomatoes soften
somewhat
6.
Set aside and let cool, place in refrigerator for two hours at
least before serving
7.
Sprinkle with grated parmesan before serving (Optional).
