Stuffed tomatoes

 

Ingredients

6 tomatoes

5 parsley stalks

5 dill stalks

1/3 cup breadcrumbs

3 crushed garlic cloves

3 tbs olive oil

 

Method

1.       Slice off the set aside the tomato tops

2.       Remove pulp with spoon, place in a food processor

3.       Add the parsley, dill and garlic and blend

4.       Add breadcrumbs and continue to blend until mixture has thickened

5.       Fill the tomatoes with the mixture, pour a tsp of olive oil over each tomato

6.       Place in a baking dish, cover tomatoes with the tops and bake in a hot oven for 20-30 minutes
