Battered Vegetables

Ingredients

Vegetables (Mushrooms, aubergines, cauliflower, courgettes, peppers) sliced cubes or strips.

¾ cup flour

Salt

Oil for frying

Wine vinegar

 

Method

1.       Place the flour in a bowl, add water and mix to a semi liquid smooth paste

2.       Heat the oil in a deep pan

3.       Dip the vegetables in the batter and fry till browned

4.       Serve on a bed of lettuce or rocket leaves and drizzle with red or white wine vinegar.
